mississippi mud brownies and other things that would make my dad cringe.

I wish I had my dad's tendencies toward healthier foods, and repulsions toward fried foods, multi-layer desserts, and heavy pasta dishes. Or at least his ability to have all things in moderation. Don't get me wrong. My dad likes to indulge here and there. He's a master pie maker but is somehow able to limit himself to one (small) piece. And he eats oatmeal cookies daily (I use the term "cookie" loosely). I've even seen him eat sandwich cookies (after scraping out the cream center). He has an admirable habit of eating only half of things. And an apple a day? Try three.

But alas. I am not repulsed by deep fried oreos. And I like to eat french fries (which, by the way, are very hard to eat in moderation). And donuts. And chocolate. And layers.

And these Mississippi Mud Brownies:

A chewy brownie. With marshmallows and chocolate chips layered on top. And peanut butter. And nuts. Oh, and a little chocolate frosting too. You know, just to seal the previous mentioned layers. I used this recipe. And I have no regrets.

Except that I also made Peanut Butter and Nutella Swirl Cookies the same week.

  1. I picked up some mini marshmallows to make the same brownies, just haven't had the energy to do it yet. Yours look delicious! Maybe mom will make them for me next week. Hmm, and maybe I can talk dad into baking a pie!

    1. Wow! I can't believe the big day is so soon. Although I'm sure you're ready to get on with it! It doesn't take much to convince dad to make a pie. And he usually has them made before we even get up in the morning!

  2. Wow, I wish I had your dad's self-control too. On the other hand, do I really want to miss out on all of the glorious yummy treats this world has to offer? Well, I'll have to try making either those cookies or the brownies and I'll give you my verdict. :) They both look delicious!

  3. I'll never have self control around treats. I seriously want to lick the frosting off of those brownies!

    1. Exactly. That's why I had to completely eliminate them during the weight loss contest. I was hoping my body would want to reject them when it was over. Not so.
